Quinoa Porridge With Coconut Water & Pears

Ingredients

  • 2 pears, quartered, cored, chopped
  • 1 pinch nutmeg
  • fresh berries (or frozen berries, to serve)
  • 1 tbs maple syrup
  • 2 cup coconut water
  • 1 vanilla bean, split (or 1 tsp vanilla bean paste)
  • 1 cup tri-colour quinoa
  • 2 tbs flaked almonds, toasted
  • 1 1/2 cup almond milk

Method

  1. Rinse quinoa under cold running water. Place in a saucepan with coconut water and vanilla and bring to the boil. Reduce heat, cover and simmer over low heat for 10 minutes or until quinoa is tender.
  2. Add milk, pear and nutmeg and stir over medium heat for 5-10 minutes or until creamy.
  3. Serve porridge topped with berries, almonds and a drizzle of syrup.
