Fruit Toast with Ricotta, Fruit & Seeds

Ingredients

  • 4 slice mighty soft fruit loaf cafe style
  • 1 passionfruit
  • 60g raspberries
  • 60g blueberries
  • 60g mango slices
  • 3/4 cup smooth ricotta
  • 1 tbs seed, fruit & nut mix
  • 1 tsp vanilla bean paste
  • 2 tbs roasted hazelnuts, chopped
  • 1 tbs honey

Method

  1. Toast 4 slices of Mighty Soft Raisin Toast.
  2. In a small bowl combine ricotta & vanilla paste.
  3. Generously slather the raisin toast with the vanilla ricotta.
  4. Layer the mango, raspberries, blueberries & passionfuit on top.
  5. Sprinkle with seed, fruit and nut mix & top off with roasted hazelnuts.
  6. Serve with a drizzle of honey.
