Ranch-style Eggs


  • 2 tbs olive oil
  • 1 onion, finely sliced
  • 1 red chilli, deseeded and finely chopped
  • 1 clove garlic, crushed
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 400g canned cherry tomatoes
  • 200g roasted red and yellow capsicums in oil (from a jar)
  • 4 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 4 tbs coriander, finely chopped (to garnish)

  1. Heat the oil in a large frying pan and add the onion, chilli, garlic, cumin and oregano.
  2. Fry gently for about 5 minutes or until soft then add the tomatoes and capsicums and cook for a further 5 minutes. If the sauce looks dry, add a splash of water.
  3. Season well and make 4 hollows in the mixture, break an egg into each and cover the pan. Cook for 5 minutes or until the eggs are just set.
  4. Serve immediately, garnished with chopped coriander.
