Spiced Kumara with Yoghurt Dressing

Add some spice to your life with Spiced Kumara with Yoghurt Dressing. The super easy recipe for a spicy kumara dish makes for the perfect side to almost any meal.

Ingredients

  • Kumara, cut into 2cm chunks - 4
  • Olive oil - 2 Tbsp
  • Smoked paprika - 1 tsp
  • Salt - 1/2 tsp
  • Chilli flakes - 1/4 tsp
  • Orange zest - 1 Tbsp
  • Greek yoghurt - 1/2 cup
  • Orange juice - 2 Tbsp
  • Grated fresh ginger - 2 tsp
  • Runny honey - 2 tsp
  • Pinch chilli flakes
  • Smoked paprika - 1/4 tsp

Method

  1. Preheat an oven to 200°C (180C fan-forced°C). Line a large baking tray with paper.
  2. Place the kumara onto the tray. Sprinkle over the smoked paprika and salt. Place into the oven for 20 minutes, then sprinkle on the chilli and orange zest cooking for a further 10 minutes until crisp and golden.
  3. To make the dressing, combine the yoghurt, orange, ginger, honey, chilli and paprika in a small bowl, stirring well to combine.
  4. Spoon over the kumara while warm and serve.
