Spiced Kumara with Yoghurt Dressing
Add some spice to your life with Spiced Kumara with Yoghurt Dressing. The super easy recipe for a spicy kumara dish makes for the perfect side to almost any meal.
Ingredients
- Kumara, cut into 2cm chunks - 4
- Olive oil - 2 Tbsp
- Smoked paprika - 1 tsp
- Salt - 1/2 tsp
- Chilli flakes - 1/4 tsp
- Orange zest - 1 Tbsp
- Greek yoghurt - 1/2 cup
- Orange juice - 2 Tbsp
- Grated fresh ginger - 2 tsp
- Runny honey - 2 tsp
- Pinch chilli flakes
- Smoked paprika - 1/4 tsp
Method
- Preheat an oven to 200°C (180C fan-forced°C). Line a large baking tray with paper.
- Place the kumara onto the tray. Sprinkle over the smoked paprika and salt. Place into the oven for 20 minutes, then sprinkle on the chilli and orange zest cooking for a further 10 minutes until crisp and golden.
- To make the dressing, combine the yoghurt, orange, ginger, honey, chilli and paprika in a small bowl, stirring well to combine.
- Spoon over the kumara while warm and serve.
