Clean Green Detox Soup
Enjoy this healthy soup with greek yoghurt and your favourite nuts
Ingredients
- 5 brown onions, peeled and chopped
- 1 cup chopped kale
- 3 zucchini, washed and chopped
- 2 broccoli heads, chopped
- 2L vegetable broth
- 2 head garlic cloves, minced
- 1 cup fresh coriander
- 1 cup fresh parsley
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp mixed herbs
- Juice of 2 lemon
- 6 tbsp coconut oil
- Pinch of sea salt
Method
- In a large pot, heat coconut oil over medium-high until melted.
- Add onions and cook for 6 minutes, then add zucchini, broccoli and kale and cook for another 5 minutes.
- Add vegetable stock and bring to the boil, then cover and reduce heat to low to simmer, for 20-25 minutes or until vegetables are soft to pierce with a fork.
- Stir in garlic, salt, spices, parsley, coriander and lemon and simmer for another 2 minutes.
- Remove from heat, uncover, then let cool, for 15 minutes.
- Working in batches if necessary, place all ingredients in a blender and blend until smooth.
- Top with greek yoghurt and your favourite nuts and enjoy!
