Hearty Carrot and Ginger King Soup
A wintery soup filled with goodness

Ingredients
- 210g packet King Gluten Free Vegetable Soup Mix
- 9 cups hot water
- 5cm piece root ginger, peeled & thinly sliced
- 500g carrots, coarsely shredded
Method
- Place the soup mix in a large saucepan and add the water and ginger.
- Bring to the boil and simmer for 45 minutes.
- Add the carrot and continue cooking for 30 minutes until the soup mix and carrot are tender.
- Serve topped with a little freshly shredded carrot.

I love this soup on a cold winter's day.
There's another very easy soup and cheapo to make. Peel and chop carrots, toss in a little butter over a gentle heat. Add vegetable or chicken stock to just above the vegetables and simmer until cooked. Mash or blend (it'll be quite thick) and add a little milk or more stock if you want it thinner. Lovely with garlic bread or croutons and black pepper.
