Roasted Parsnips with Honey & Mustard

These crispy honey & mustard parsnips are a must-have on any roasted dinner plate.

Ingredients

  • 500g parsnips
  • 3 Tbsp honey
  • 2 Tbsp grain mustard
  • 2 Tbsp olive oil
  • Salt, to serve
  • Black pepper, to serve

Method

  1. Preheat oven to 190°c. Lightly grease a roasting pan with a little oil.
  2. Refer to image on how to peel parsnips and halve or quarter lengthways if large.
  3. Mix honey, mustard and olive oil together in a small bowl and season with salt and pepper.
  4. Arrange parsnips, in a single layer into the roasting pan and drizzle over the honey mustard mixture. Roast for 35–40 minutes, turning halfway through, until tender and golden.
