Potato Latkes featuring Cold Smoked Salmon Shavings

Ingredients

  • 100g Aoraki Cold Smoked Salmon Shavings
Sauce ingredients
  • 1/2 cup of Crème fraîche
  • 1 Tbsp chopped capers
  • 1 Tbsp chopped gherkins
  • 1 Tbsp chopped parsley
  • 1 Tbsp chopped tarragon
  • 2 tsp wholegrain mustard
  • Chervil sprigs (or microgreens of your choice)
Latkes ingredients
  • 500g agria potatoes (or similar)
  • 1/2 cup finely diced onion
  • 2 eggs
  • Salt and pepper
  • 1/3 cup frying oil

Method

  1. Peel and grate the potatoes. Wash well for 2-3 minutes in cold water then squeeze dry in tea towel.
  2. Separate egg yolks from whites. Add yolks and onion to potato and season well with salt. Whisk egg whites to soft peaks and fold in.
  3. Heat oil to hot, add tablespoon dollops of potato mix and fry until golden. For best results cook in small batches, drain onto paper towel.
  4. Combine together all sauce ingredients.
  5. Spread the sauce on the latkes, add the salmon shavings, garnish with chervil sprigs and serve.
