Air Fryer Zucchini & Corn Fritters
Stack them up and serve with a good spoonful of yoghurt dip!
Ingredients
- 3 medium zucchini
- 1 cup corn kernels, they can be fresh/canned or frozen and thawed
- 2 eggs
- ½ cup spelt flour (or chickpea flour)
- 1 teaspoon baking powder
- ¼ cup parmesan cheese
- Handful of chopped coriander/cilantro or parsley
- Salt and pepper to taste
- Olive oil
Tzatziki Dip
- 5 tablespoon plain greek yoghurt
- Handful of mint
- 1 tablespoon lemon juice
Method
- Place a clean tea towel in a bowl, using a box grater, grate zucchini into the towel and set aside for 10 minutes.
- In another large bowl, combine the corn, herbs, eggs, parmesan and season with salt and pepper to taste.
- Hold the tea towel up, and squeeze out the excess liquid from the grated zucchini to remove as much liquid as possible.
- Add zucchini to the other ingredients then add the flour and baking powder and mix.
- Spoon some of the mixture and roll into balls and place on your air fryer tray lined with baking paper. If the mixture is too wet, add a little more flour.
- Once the mixture is finished, flatten the balls slightly.
- Turn on your air fryer and place inside.
- After 20 minutes or when slightly golden they are done!
- Mix tzatziki dip ingredients together in a bowl and serve.
- Let them rest for a few minutes on a cooling rack, stack them up and serve with a good spoon of the yoghurt dip!
