Make this easy zucchini fritters recipe for a healthier addition to your little one's lunch box. Team them with juicy strawberries and crunchy pepitas.


  • 2 small zucchini, grated
  • 1 small brown onion, grated
  • 250g canned corn kernels, drained
  • 1/3 cup plain flour
  • 2 free range eggs, lightly beaten
  • 250g reduced-fat smooth ricotta
  • 5ml olive oil cooking spray
  • 250g strawberries, halved
  • 1/4 cup pepitas

  1. Using your hands, squeeze excess moisture from zucchini and onion. Place in a large bowl. Add corn, flour, egg and half the ricotta, then mix well to combine. Season with pepper.
  2. Spray a large frying pan with oil and heat over medium-low heat. Working in batches, spoon 1/4 cupfuls zucchini mixture into pan. Cook for 4 minutes on each side or until golden and cooked through. Repeat with remaining zucchini mixture to make a total of 6 fritters.
  3. Place 3 fritters in each lunch box with strawberries, pepitas and remaining ricotta.
