Pear & Blue Cheese Fritters


  • 1 1/4 cup self raising flour
  • 1/4 cup sour cream
  • 1 pear (extra)
  • 2 pears, finely diced
  • 50g blue cheese, crumbled
  • 2/3 cup buttermilk
  • 2 eggs
  • 1 bunch chives, snipped
  • 2 tbs vegetable oil

  1. Whisk together the flour, eggs and buttermilk in a large bowl. Stir in pear, cheese and most of chives, reserving some for garnish. Combine well.
  2. Heat half of the oil in a large non-stick frying pan over medium heat. In batches, drop large spoonfuls of the mixture into the pan and cook for 2 minutes each side or until golden brown and cooked through, adding the remaining oil as necessary. Top fritters with a little sour cream, pear and chives to serve.
