Ingredients

  • 40g butter
  • 1 Tbsp olive oil
  • 1 large brown onion, finely chopped
  • 200g streaky bacon rashers, finely chopped
  • 6 cups sourdough breadcrumbs
  • 1 cup roasted macadamia nuts, roughly chopped
  • 1 large orange, rind finely grated, juiced
  • 3 tsp dried mixed herbs
  • 1 cup roughly chopped flat-leaf parsley leaves
  • 1 egg, whisked
  • 1/3 cup honey, melted
  • 7kg Macro whole turkey

Method

  1. Preheat oven to 180°c. Heat butter and oil in a frying pan over medium heat. When melted, add onion and bacon and cook for 10 minutes or until softened. Transfer to a large bowl and cool. Add breadcrumbs, nuts, orange rind, orange juice, dried herbs, parsley, egg and 2 tbs honey. Season and stir until well combined.
  2. Fill front and back cavity of turkey with stuffing. Tuck wings under turkey and secure legs with kitchen twine. Place turkey into a large roasting pan and rub with oil. Roast for 3 hours. If turkey should begin to colour too much, cover loosely with large sheets of foil. Remove foil. Pour melted honey into a small bowl, add 2 tbs butter and stir until combined. Brush mixture liberally over turkey. Roast for a further 30 minutes or until cooked through. If turkey should brown too much, cover loosely with foil. Transfer turkey to a large serving platter. Serve with vegetables of choice.
