Vegan Chickpea Burgers

This Chickpea Burger is so delicious and easy to make, no one will miss the meat! You can have these burgers ready in less than 30 minutes, making them a perfect weeknight meal.


  • 1/2 punnet snow pea sprouts (trimmed)
  • 1 Lebanese cucumber (thinly sliced)
  • 300g slices roasted red pepper
  • 1 Turkish loaf
  • 1/3 cup vegan mayonnaise
  • 1 tbs olive oil
  • 500g chickpea veggie burgers
  • 200g beetroot hummus

  1. Heat a large frying pan over medium heat. Cut Turkish loaf into quarters and split each portion through the centre. Place cut-sides down in pan and lightly toast for 1 minute. Remove from pan.
  2. Heat oil in same pan over medium heat. Cook veggie burger patties for 3-4 minutes on each side or until golden brown and heated through. Remove from pan and slice in half to fit bread, if necessary.
  3. Spread bread bases with hummus, top with pepper, burger patties, sprouts and cucumber. Drizzle over mayonnaise and season. Top with bread lids to serve.
