Carrot Cake Slice
The perfect vegan sweet treat
Satisfy your carrot cake cravings with this dangerously good vegan slice.
Ingredients
- 2 Tbsp Organic brown flaxseed meal
- 1 cup shredded carrot
- 1 apple, cored and roughly chopped
- 1 ripe banana, roughly chopped
- 150g rolled oats
- 1 cup Macro almond milk
- 1 Tbsp vanilla extract
- ¼ cup date syrup
- ¾ tsp xanthan gum
- 1 Tbsp cinnamon
- 1 tsp ground ginger
- Pinch nutmeg
Method
- Preheat oven to 180°c. Line a 20 x 20 x 5cm square baking tin with baking paper. In a small bowl combine flaxseed meal with 6 tbs warm water, then let stand for 5 minutes.
- Place all ingredients in a food processor and process until smooth. Pour mixture into prepared baking tin and bake for 40-45 minutes or until a skewer inserted into the middle comes out clean.
