Satisfy your carrot cake cravings with this dangerously good vegan slice.


  • 2 Tbsp Organic brown flaxseed meal
  • 1 cup shredded carrot
  • 1 apple, cored and roughly chopped
  • 1 ripe banana, roughly chopped
  • 150g rolled oats
  • 1 cup Macro almond milk
  • 1 Tbsp vanilla extract
  • ¼ cup date syrup
  • ¾ tsp xanthan gum
  • 1 Tbsp cinnamon
  • 1 tsp ground ginger
  • Pinch nutmeg

  1. Preheat oven to 180°c. Line a 20 x 20 x 5cm square baking tin with baking paper. In a small bowl combine flaxseed meal with 6 tbs warm water, then let stand for 5 minutes.
  2. Place all ingredients in a food processor and process until smooth. Pour mixture into prepared baking tin and bake for 40-45 minutes or until a skewer inserted into the middle comes out clean.
