Blueberry Macro Chia Seed Overnight Oats

This recipe takes 60 seconds to prep and make a great base for any toppings you choose!

The classic combination of blueberries and oats is volumised with the addition of Macro Superfoods including chia seeds, peanut butter, and wholesome nuts!

Ingredients

  • 1/2 cup rolled oats
  • 2 Tbsp chia seeds
  • 1 cup rice or oat milk
  • optional: 1/2 tsp cinnamon and a pinch of sea salt
  • 1/2 a banana, sliced
  • 1/2 cup fresh blueberries (or frozen)
  • 1 Tbsp peanut butter, plus extra for topping
  • 2 Tbsps of your desired seeds or nuts, plus extra for topping

Method

  1. Put the oats, chia seeds, banana, blueberries, peanut butter and milk (and cinnamon and sea salt if you using) into an air-tight container and store it in the refrigerator overnight. Make sure to mix well so there are no clumps.
  2. In the morning, top the overnight oats with other optional toppings you desire such as nuts, seeds, cacao nibs or extra fruit.
