Supreme Meatloaf Pizza V2

This is the best of two worlds, meatloaf and pizza!

Ingredients

  • 4 pitted Kalamata olives, sliced
  • 1/2 small red capsicum, deseeded, finely sliced
  • 1/2 small brown onion, finely chopped
  • 2 button mushrooms, sliced
  • 50g sachet pizza sauce with garlic, onion & herbs
  • 5ml extra virgin olive oil spray
  • 30g rocket (to serve)
  • 1 cup grated pizza cheese
  • 500g extra lean beef mince
  • 1 free range eggs, lightly whisked
  • 1/3 cup panko breadcrumbs
  • 40g pepperoni

Method

  1. Preheat oven to 200°C. Line a baking tray with baking paper.
  2. Combine mince, onion, breadcrumbs, egg and half the pizza sauce in a bowl. Season and mix together using your hands until well combined and smooth.
  3. Transfer to tray and press out to a 22cm round. Spray with oil. Bake for 20 minutes or until golden. Press surface to release juices and drain.
  4. Spread remaining pizza sauce over meat. Scatter over half the cheese, then top with pepperoni, capsicum, mushroom and olive, and finish with remaining cheese. Bake for a further 10 minutes or until cheese melts and topping is golden. Cut into quarters and top with rocket to serve.
