Breakfast Pizza

Ingredients

  • 1 tsp olive oil
  • 1/4 cup pizza sauce
  • 4 piece shortcut bacon (diced)
  • 1 cup pizza cheese
  • 2 cup potato minis
  • 1 free range egg
  • 1/2 bunch chives, chopped
  • 1 pizza base

Method

  1. Heat oil in a medium frying pan over medium-high heat. Cook bacon for 3-4 minutes or until crispy. Add potato minis and cook for a further 2 minutes or until potato minis are slightly thawed.
  2. Meanwhile, preheat oven to 180°C. Line a baking tray with baking paper. Spread sauce on pizza base and place on tray. Top with bacon and potato minis, leaving a well in the centre for the egg. Top with cheese, then crack the egg in the centre.
  3. Bake pizza for 20 minutes, or until potato minis are golden and egg is cooked. Sprinkle with chives, slice and serve immediately.
