Method

  1. Slice steak into 1cm strips across the grain. Marinate in 1 tbs each of the oil and kecap manis. Thread beef onto 12 soaked bamboo skewers.
  2. Combine remaining kecap manis with peanut butter and chilli flakes in a small saucepan. Whisk in 1/3 cup boiling water and stir over low heat until liquid simmers. Remove from heat and stir in lime or lemon juice.
  3. To make broccoli fried rice, heat remaining oil in a wok or pan over high heat. Add broccoli, rice and ginger and stir-fry for 2 minutes or until fragrant. Add bok choy stems and stir-fry for a further 2 minutes. Toss through bok choy leaves until just wilted.
  4. Heat a chargrill pan or barbecue grill on high. Cook beef skewers for 3-4 minutes, turning once, or until well browned and sticky.
  5. Serve skewers atop broccoli fried rice and spoon over satay sauce.
