Maple and Apricot Baked Brie

This baked brie is a delicious centrepiece for your cheese platter. Warm, gooey cheese is matched with apricots, pistachios and sticky-sweet maple syrup.

Ingredients

  • 50g Angas park apricots, coarsely chopped
  • 200g brie cheese
  • 2 tsp maple syrup
  • 1 tbs pistachio kernels, chopped
  • 1 pinch pepper (for seasoning) crackers (for serving)

Method

  1. Preheat oven to 200°C/180°C fan-forced.
  2. Line a baking tray with baking paper.
  3. Place brie onto prepared tray.
  4. Pour over maple syrup, top with apricots and pistachios; season to taste with pepper
  5. Bake for 10 minutes or until apricots are slightly softened and sticky. Serve drizzled
  6. With maple syrup from the tray, and with crackers
