Delicious homemade Greek Souvlaki!

Bring a taste of Greece to your kitchen this week with our easy to make chicken souvlaki recipe. The homemade tzaztiki sauce is sure to be a crowd-pleaser!

Ingredients

  • 3 large chicken breasts, cut into strips
  • 8 pitas or tortillas, warmed
  • 4 tomatoes, sliced
  • 1 cucumber, sliced
  • lettuce, sliced
  • 2 red capsicums, sliced
Marinade
  • 6 tsp olive oil
  • 3 tsp oregano
  • 2 tsp ground cumin
  • 2 tsp coriander
  • 2 tsp dried mint
  • 1 tsp cinnamon
  • 1 tsp black pepper
  • 1 tsp salt
  • 8 crushed garlic cloves
  • 2 tsp smoked paprika
  • 2 lemons, zest & juice
Tzatziki
  • 2 cups grated cucumber
  • 2 ½ cups plain Greek yogurt
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp chopped fresh dill
  • 3 tbsp fresh lemon juice
  • 3 tsp lemon zest
  • 2 large cloves garlic, crushed
  • 1 tsp salt
  • 1 tsp pepper

Method

Marinade
  1. Combine all of the marinade ingredients in a mixing bowl. Place the chicken strips into the mixing bowl or alternatively you could use a snap lock bag. Coat the strips in the marinade, ensuring all of the chicken is covered. Refrigerate for 3-12 hours.
Tzatziki
  1. With your hands or a tea towel squeeze some of the excess water out of the grated cucumber. Mix all of the ingredients together in a bowl; add more of the elements if needed to achieve your desired taste/texture. Serve immediately or chill. This recipe keeps for up to 3 days in the refrigerator.
Cook & Assemble
  1. Soak 10 to 15 wooden skewers in water for 30 minutes. When ready, thread marinated chicken pieces through the prepared skewers. Grill the chicken on a BBQ or in the oven until cooked through. While grilling, brush the chicken lightly with any leftover marinade to add additional flavour. When the chicken is almost ready toast the pitas in a toaster or in the oven until warmed through.
  2. To assemble, first spread Tzatziki sauce on the pita or tortilla, add chicken pieces (take them off skewers first) and then the vegetables.
