Ingredients

  • 150g butter
  • 1 large brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 400g tomato puree
  • 600ml cream
  • 2 tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp garam masala
  • 800g chicken breast, cubed
  • 2 tbsp vegetable oil
  • 2 tbsp tandoori masala
  • Rice to serve
  • Fresh parsley to garnish

Method

  1. Melt 50g of the butter in a large fry pan over medium heat. Cook onion and garlic until the onions are caramelised.
  2. While the onions are cooking, melt 100g butter in a large saucepan. Add the tomato puree, cream, salt, cayenne pepper, and garam masala. Bring to the boil then reduce heat. Cover and simmer for 30 minutes, stirring occasionally.
  3. While the sauce is cooking pan fry the chicken until cooked through. Add the caramelised onions to the sauce and simmer for another 15 minutes.
  4. Serve over rice and garnish with parsley.
