Fish Chowder
Ingredients
- 1 tbsp Butter
- 1 Large Onion; diced
- 2 stalks Celery
- 3 cloves Garlic
- 1 tbsp Paprika
- 2 cups Fish stock
- 2 Ea Potatoes; diced
- 2 tbsp All purpose flour
- 2 cups Milk
- 3 sprigs Dill
- 200g Salmon, diced in chunks
- 100g Moki, diced in chunks
Method
- In a large pot, add butter, onion, celery and garlic. Cook until softened. Add in paprika salt and pepper then cook for another minute.
- Add potatoes and fish stock simmer until potatoes are cooked.
- Whisk milk and flour together then stir into the pot.
- Add Salmon and Moki, cook for about 3 to 4 minutes depending on the size of the fish.
- Finish with fresh herbs, adjust seasoning then serve with focaccia.
