Falafel & Pumpkin Salad
This wallet-friendly falafel and pumpkin salad is so easy to make and packed with flavour.
Ingredients
- 2 tbs extra virgin olive oil
- 450g sesame falafel balls
- 120g baby spinach leaves
- 2 cups roasted chopped pumpkin
- 1/3 cup coleslaw dressing
- 1/2 cup mixed unsalted nuts
Method
- Heat oil in a large non-stick frying pan over medium-high heat. Cook falafel, in batches, for 4-5 minutes, turning, or until golden-brown and hot. Roughly tear falafel in half.
- Combine spinach, pumpkin and falafel in a large bowl. Divide among serving bowls. Drizzle with dressing. Serve topped with nuts.
