Falafel Pumpkin Salad v2

This wallet-friendly falafel and pumpkin salad is so easy to make and packed with flavour.


  • 2 tbs extra virgin olive oil
  • 450g sesame falafel balls
  • 120g baby spinach leaves
  • 2 cups roasted chopped pumpkin
  • 1/3 cup coleslaw dressing
  • 1/2 cup mixed unsalted nuts

  1. Heat oil in a large non-stick frying pan over medium-high heat. Cook falafel, in batches, for 4-5 minutes, turning, or until golden-brown and hot. Roughly tear falafel in half.
  2. Combine spinach, pumpkin and falafel in a large bowl. Divide among serving bowls. Drizzle with dressing. Serve topped with nuts.
