Cumin Lamb Ciabatta

Ingredients

  • Lamb Leg 200g
  • 2 tbsp soy sauce
  • 1 tbsp corn flour
  • A pinch of salt
  • 1 tsp garlic powder
  • 1 tbp baking soda
  • 1 sbsp cumin podwer
  • 1 tbsp Sichan powder
  • 3 dried chinese red chillies
  • 1 small sliced red onion
  • 4 sliced garlic gloves
  • 1 tbsp Sichuan peppercorns
  • 1 tbsp tomato ketchup
  • Ciabatta Bread
  • Lettuce
  • Spring Onions
  • Sesame Seeds

Method

  1. Start by marinating 200g of lamb leg. In a bowl, combine 2 tbsp dark soy sauce, 1 tbsp corn flour, a pinch of salt, 1 tsp garlic powder, and 1 tsp baking soda. Mix well and let the lamb sit in the marinade for at least 30 minutes to absorb the flavors.
  2. Prepare the stir fry: Heat a wok or frying pan over medium heat. Add the marinated lamb and stir-fry until the lamb is browned. Remove from the pan and set aside.
  3. In the same pan, add 1 tbsp cumin powder, 1 tbsp Sichuan powder, 3 dried Chinese red chilies, 1 small sliced red onion, 4 sliced garlic cloves, and 1 tbsp Sichuan peppercorns. Stir-fry until fragrant.
  4. Add the browned lamb back into the pan, along with 1 tbsp tomato ketchup. Stir well to combine.
  5. Toast the plain ciabatta until golden. For assembly, layer the toasted ciabatta with fresh lettuce, the cumin lamb stir fry, spring onions, and crispy chili.
  6. Garnish with a sprinkle of white sesame seeds and serve hot.
