Cumin Lamb Ciabatta
Ingredients
- Lamb Leg 200g
- 2 tbsp soy sauce
- 1 tbsp corn flour
- A pinch of salt
- 1 tsp garlic powder
- 1 tbp baking soda
- 1 sbsp cumin podwer
- 1 tbsp Sichan powder
- 3 dried chinese red chillies
- 1 small sliced red onion
- 4 sliced garlic gloves
- 1 tbsp Sichuan peppercorns
- 1 tbsp tomato ketchup
- Ciabatta Bread
- Lettuce
- Spring Onions
- Sesame Seeds
Method
- Start by marinating 200g of lamb leg. In a bowl, combine 2 tbsp dark soy sauce, 1 tbsp corn flour, a pinch of salt, 1 tsp garlic powder, and 1 tsp baking soda. Mix well and let the lamb sit in the marinade for at least 30 minutes to absorb the flavors.
- Prepare the stir fry: Heat a wok or frying pan over medium heat. Add the marinated lamb and stir-fry until the lamb is browned. Remove from the pan and set aside.
- In the same pan, add 1 tbsp cumin powder, 1 tbsp Sichuan powder, 3 dried Chinese red chilies, 1 small sliced red onion, 4 sliced garlic cloves, and 1 tbsp Sichuan peppercorns. Stir-fry until fragrant.
- Add the browned lamb back into the pan, along with 1 tbsp tomato ketchup. Stir well to combine.
- Toast the plain ciabatta until golden. For assembly, layer the toasted ciabatta with fresh lettuce, the cumin lamb stir fry, spring onions, and crispy chili.
- Garnish with a sprinkle of white sesame seeds and serve hot.
