Woodland Free Range Eggs


  • 50 grams butter
  • ½ cup flour
  • 2 cups milk
  • 150g blue cheese, chopped finely
  • ¼ cup grated Parmesan cheese
  • 4 egg yolks
  • salt and pepper
  • 4 egg whites
  • pinch cream tartar

  1. Pre-heat the oven to 180 degrees Celsius
  2. In a saucepan melt the butter, add flour and stir until bubbling. Stir in the milk and cook until smooth.
  3. Stir in the cheeses and heat until melted.
  4. Remove from the heat and beat in the egg yolks one at a time. Season.
  5. Beat the egg whites with the cream of tartar. Do not over beat.
  6. Fold into cheese mixture.
  7. Divide among 4 ramekins.
  8. Place ramekins in a shallow roasting dish. Pour in enough water to come 1 cm from top of ramekin.
  9. Bake for 30 - 40 minutes. Or until well risen and puffy.
