Best-Ever Ham & Cheese Toastie


  • 80g butter, soft
  • 50g sundried tomato pesto (save 18g for later)
  • 4 slice leg ham off the bone (thick)
  • 1 loaf sourdough bread
  • 1 cup baby spinach leaves
  • 1/4 cup mayonnaise (to serve)
  • 1 cup pizza cheese, grated

  1. Using a bread knife, cut 8 thick slices from the bread. Place 4 slices of bread on a chopping board. Spread each with pesto, reserving 1 tbs.
  2. Top with ham, cheese and spinach. Season with salt and pepper. Top with remaining bread slices. Butter outside of each sandwich.
  3. Heat a large heavy-based frying pan over medium heat. Toast sandwiches for 2-3 minutes each side until golden brown and cheese is melted.
  4. Meanwhile, mix reserved tomato pesto with mayonnaise. Cut toasties in half and serve with pesto mayonnaise on the side.
