Baked, Stuffed Potatoes

Lots of great ideas for one of our most loved vegetables - The Potato.
Ingredients
- 4 medium potatoes
- Seasoning of your choice
- 4 tbsp of milk
- 100g Cheese
- Potato filling: these can be filled with a variety of things. We recommend bacon, corn, red onion, mushrooms, capsicum & chives as options to mix & match. Cut the filling ingredients into 1cm cubes.
Method
Cooking The Potato
- To bake: Turn your oven to 200 Degrees Celsius. Scrub potatoes until clean. Using a skewer/fork stab each potato 6 times. Place potatoes on an oven try and bake for about 60 minutes or until soft.
- To microwave: Scrub potatoes until clean. Using a skewer/fork stab each potato 6 times. Each medium sized potato takes about 3-4 minutes to cook on high power; so two potatoes will take about 6-8 minutes. Place potatoes on a paper towel and stand for two minutes.
Making The Filling
- Prepare as directed: Cut a baked potato in half, scoop out the middle, place in bowl, and mash it with a tablespoon of milk. Mix in prepared filling ingredients.
- Pile back into the potato skins. Grate a little cheese over the top.
- Re-heat in the microwave for 2 minutes or in the oven for 10 minutes.
