10 Minute Vegetarian Lettuce Burritos
                    Recipe can also be made using Uncle Ben's Mexican Rice Pouches and 150g of black beans, drained.
Ingredients
- 2 x 250g Uncle Ben's Tex-Mex Style or Smoky Flavour Rice & Beans Pouches
 - 12 large cos lettuce leaves
 - 1/3 cup sour cream
 - 1 cup grated cheddar
 - 300g can corn kernels, drained
 - 1 avocado, thinly sliced
 - 1/3 cup fresh coriander leaves
 - Lime wedges, to serve
 
Method
- Heat rice following packet directions. Fluff with fork.
 - Meanwhile, trim 6cm off base of each lettuce leaf. Spread leaves with sour cream. Top with rice, cheese, corn, avocado and coriander.
 - Fold over base first, then fold in sides, leaving tops exposed. Secure with toothpicks. Serve with lime wedges.
