Steak Sub With Sweet Potato Chips

Ingredients

  • 1 brown onion, thinly sliced
  • 2 tomatoes, thinly sliced
  • 1 beetroot, peeled, grated
  • 125g soft cheddar, crumbled
  • 60g baby spinach leaves
  • 400g Turkish bread, split, toasted
  • 1/4 cup aioli
  • 135g sweet potato chips (optional)
  • 2 tbs olive oil
  • 400g beef sizzle steaks

Method

  1. Heat 1 tbs oil in a large frying pan over medium heat. Cook onion for 8 minutes or until soft and golden brown. Remove from pan.
  2. Reheat frying pan over high heat. Coat steaks with remaining oil and season. Cook, in batches, for 1 minute on each side or until golden brown.
  3. Place bottom half of toast on a large chopping board. Spread with aioli, top with spinach, tomato, beetroot, steaks, onion and cheese.
  4. Add a few chips, if using, sandwich with toast lid and cut into 6 sandwiches to serve.
