Slow-Cooked Lamb Shanks with Potatoes

These classic lamb shanks with potatoes are a wholesome dish for those winter months.

Ingredients

  • 1 tbs oil
  • 4 large lamb shanks, frenched, trimmed
  • 500g potato, peeled, cut into quarters
  • 1 x 420g can Campbell’s R & W Tomato Condensed Soup
  • 1L (4 cups) Campbell’s Real Stock- Salt Reduced Beef
  • 2 tbs brown sugar
  • 2 tsp dried oregano leaves

Method

  1. Heat oil in a medium sized frying pan, brown the lamb shanks in a pan over medium heat.
  2. Place potato and lamb shanks in the slow cooker. Combine Campbell’s Real Stock and Campbell’s Condensed Soup, brown sugar and oregano.
  3. Pour mixture over lamb. Cover and on a low setting, set the timer for 8 hours, stirring occasionally, or until potatoes and lamb are tender and cooked through.
