To make the base first blend the oats or buckwheat into a flour. Then add all remaining ingredients until combined, add water if needed. Press this mixture into a tray lined with baking paper and pop into the freezer.
To make the caramel, place all ingredients into a blender and blend until completely smooth. Take the base out of the freezer and pour the caramel evenly on top. Place this bake in the freezer to set for 2-3 hours.
To make the chocolate, melt the coconut oil and add remaining ingredients.
Once the caramel is set cut into bars and dip in the melted chocolate. Place on baking sheet and sprinkle over sea salt/toasted nuts. Put in the freezer to store.
