Lemon Meringue Tartlets

Enjoy the smooth lemon filling, sweet meringue and buttery biscuit flavours of these classic lemon meringue tartlets.


  • 12 x 6cm cooked sweet short pastry cases
  • 1 cup lemon curd
  • 2 egg whites
  • 1/4 cup caster sugar
  • finely grated rind 1 lemon

  1. Preheat the oven to 190C.
  2. Place the pastry cases on a baking tray and fill each case with lemon curd.
  3. Whip the egg whites until fluffy. Gradually beat in the caster sugar until thick and shiny.
  4. Pipe or spoon onto the lemon curd.
  5. Bake for about 8 minutes or until golden, cool.
  6. Top with the lemon rind.
  7. Great served with whipped cream.
