Family sized Italian style Toastie

Spoil the whole family (and save on clean-up!) with this super-sized toastie, stuffed with shaved meats, pesto, rocket and tomato. Grab a slice before they're gone!


  • 350g ciabatta loaf, cut in half lengthways
  • 1/3 cup basil pesto
  • 1/2 bunch basil, leaves picked
  • 100g gouda cheese slices
  • 80g mild salami, thinly sliced
  • 60g baby rocket
  • 285g woodfired roasted peppers, drained
  • 135g roasted eggplant, drained well
  • 2 gourmet tomatoes, sliced

  1. Preheat sandwich press. Spread pesto evenly over both bread halves. Top sandwich base with basil, gouda, salami, rocket, capsicum, eggplant and tomato. Add sandwich top.
  2. Toast for 5-8 minutes or until top is golden and cheese has melted.
  3. Transfer to a board and cut into 4 pieces. Serve.
