Chicken Zoodle Salad


  • 1/2 avocado (sliced)
  • 2 zucchini (spiralised)
  • 120g baby rocket
  • 40g pitted green olives (sliced)
  • 6 slices prosciutto (grilled)
Green Goddess Dressing
  • 1/2 avocado
  • 1 spring onion (chopped)
  • 1 tbs white wine vinegar
  • 1 tbs olive oil
  • 2 tbs mayonnaise
  • 1 tbs olive oil
  • 2 tbs lemon juice
  • 2 tbs all-purpose seasoning
  • 4 chicken thigh fillets

  1. To make the chicken, combine pepper seasoning, lemon juice and oil in a bowl. Add chicken and turn to coat.
  2. Cook chicken in a preheated chargrill pan or barbecue over medium-high heat for 4 minutes on each side or until cooked through. Slice.
  3. To make the green goddess dressing, process all the ingredients in a small food processor until smooth.
  4. Spread a little dressing onto plates. Top with rocket, zucchini, avocado, prosciutto, olives and chicken. Season with pepper. Serve.
