Baked Ham

What's Christmas without a ham? Make this the centrepiece dish of your festive feast.


  • 1 bone in full leg ham
  • 200g-300g streaky bacon
  • 1½ Tbsp canola oil for glaze
  • ½ cup diced red onion for glaze
  • 2 tsp garlic paste for glaze
  • 1 tsp cumin seeds for glaze
  • ½ tsp coriander seeds, crushed for glaze
  • ½ tsp chilli flakes for glaze
  • ½ tsp smoked paprika for glaze
  • ½ tsp fennel seeds for glaze
  • ¼ tsp cayenne pepper for glaze
  • 1 tsp instant coffee granules for glaze
  • ½ cup brown sugar for glaze
  • ½ cup maple syrup for glaze
  • ¾ cup red wine vinegar for glaze

  1. Preheat oven to 220°c. Carefully remove the rind from the ham, leaving the fat layer in place.
  2. Place the ham on a rack in a baking pan. Lay bacon slices, overlapping slightly over the ham to cover. Brush with glaze.
  3. Bake for 5 minutes, then reduce temperature to 180°c. Cook for 40-45 minutes, basting with the juices and brushing regularly with remaining glaze if needed, or until the surface of the ham is sticky and caramelised. Remove from oven and set aside for 15 minutes before slicing. Serve warm or cold.
