Baked Bean Jaffles
A quick and easy family favourite

Also known as toasted sandwiches, these tasty jaffles are the perfect breakfast or after school snack option.

Ingredients

  • 8 thick slices 4 seed bread
  • 40g butter, softened
  • 11/2 cups grated mozzarella
  • 40g baby spinach
  • 420g can reduced-salt baked beans
  • 8 slices Prosciutto
  • Continental parsley, to garnish

Method

  1. Preheat jaffle iron on a gas cooktop or barbecue.
  2. Spread bread slices on one side with butter. Top 4 unbuttered sides with half the cheese, spinach, beans and remaining cheese. Top with remaining bread slices, buttered sides up.
  3. Wrap each sandwich in 2 slices of prosciutto. Cook sandwiches in batches in jaffle iron for 4 minutes turning halfway, or until golden. Cut into triangles, garnish with parsley and serve.

Handy Tips

These jaffles can also be cooked in a toasted sandwich maker or frying pan.
