This Italian-inspired recipe puts a twist on the classic Caprese salad with the classic flavour combo of fresh basil, tomato and mozzarella.

Ingredients

  • 6 truss tomatoes
  • 200g fresh mozzarella, cut into 6 slices
  • 1/2 cup basil leaves
  • 1 clove garlic, crushed
  • 2 tbs extra virgin olive oil
  • 2 tbs Macro Organic balsamic vinegar
  • 1 tbs brown sugar

Method

  1. Preheat oven to 220°C/200°C fan-forced. Cut a 2cm-thick slice from tops of each tomato. Reserve tops.
  2. Place tomato bases in a baking dish. Arrange 1 mozzarella slice over each tomato, followed by a basil leaf. Sandwich with reserved tomato tops.
  3. Place garlic, oil, vinegar and sugar in a small bowl, whisking until combined. Drizzle over tomatoes and roast for 12 minutes or until mozzarella has melted and tomatoes begin to blister.
  4. Coarsely chop remaining basil and add to pan juices. Season and serve
