Peach Iced Tea
Use fresh peaches and mint to create this easy peach iced tea bursting with flavour. The perfect summer beverage, make this for a picnic or afternoon tea.
Ingredients
- 6 black tea bags
- 3 yellow peaches, halved, destoned
- 1 bunch mint, leaves picked
- 1 1/2 tbsp maple syrup
Method
- Place tea bags in a large heatproof jug and pour over 1.5L boiling water. Stand for 15 minutes to allow flavours to infuse. Discard tea bags.
- Meanwhile, roughly chop 2 peaches, then place in a separate large heatproof jug with half of the mint. Using a muddler or wooden spoon, roughly mash peach and mint until broken down. Strain peach mixture into tea and stir in syrup. Refrigerate for 2 hours or until chilled.
- Cut remaining peach into thick wedges. Divide peach wedges and remaining mint among 6 x 1 1/2-cup capacity glasses half-filled with ice cubes. Pour over peach tea. Serve.
