Grazing Platter

Celebrate the summer season with a delicious grazing platter! Make it your own by adding your favourite cheese, dips, fruit and preserves.

Ingredients

  • Cheeses: vintage cheddar, blue, brie
  • Barker’s chutneys: caramelised onion, plum & fig, spicy tomato
  • Heartland chips: smoky BBQ, sea salt & vinegar
  • Salami, prosciutto
  • Plain & seeded crackers
  • Seasonal fruits (grapes, apple/pear slices, dried apricots/figs)
  • Almonds or candied walnuts
  • Pickles & olives
  • Honey
  • Fresh herbs & cracked pepper

Method

Prepare the Base
  1. Select a large wooden board or just baking paper.
  2. Place small bowls on the board for chutneys, olives, pickles, nuts, and honey.
Arrange the Cheeses
  1. Cut cheddar into slices, brie into wedges, and leave blue cheese in chunks.
  2. Space cheeses evenly around the board.
Add the Meats
  1. Fold or roll salami and prosciutto for visual appeal.
  2. Fan out brisket slices near the cheeses.
Place Crackers & Chips
  1. Stack crackers in small piles.
  2. Add chips in loose mounds or bowls.
Add Fruits & Nuts
  1. Scatter fresh fruit and dried fruit around the platter.
  2. Fill gaps with almonds or candied walnuts.
Finish & Garnish
  1. Drizzle honey near the cheeses.
  2. Sprinkle fresh herbs and cracked pepper over the board.
Serve
  1. Serve immediately or cover and refrigerate (remove 30 minutes before serving).
