Chicken Chop Suey

A fantastic recipe for using up those leftover veggies sitting in the fridge.

Ingredients

  • 250g lean cooked chicken
  • 2 packets of 2 minute noodles
  • 2-3 Tbsp water
  • 1-2 cloves garlic, peeled and finely chopped
  • 1 tsp finely chopped root ginger
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 carrot, sliced
  • 1 stick of celery, sliced
  • 2 Tbsp soy sauce

Method

  1. Remove any skin or fat from the chicken and break into bite-sized pieces.
  2. Place the 2 minute noodles in a large bowl and cover with boiling water. Leave for 2-3 minutes until softened.
  3. Heat the water in a large frying pan or wok. Add the garlic, ginger, broccoli, cauliflower, carrot and celery. Stir-fry for 4-5 mintues or until the vegetables are beginning to soften.
  4. Drain the noodles and add to the pan. Add the chicken and soy sauce. Mix well. Heat gently until all warmed through.
