Ingredients

  • 1 slice thick brioche
  • 2 eggs
  • 200ml whole milk
  • 50ml cream
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1⁄2 tsp cinnamon
  • 20g butter (for cooking)
  • 100g fresh blueberries
  • 50g toasted coconut flakes
Cinnamon Sugar
  • 2 tbsp sugar
  • 1 tsp cinnamon
Chantilly Cream
  • 100ml heavy cream
  • 20g icing sugar
  • 1 tsp vanilla extract

Method

  1. In a bowl, whisk eggs, milk, cream, sugar, vanilla, and cinnamon together.
  2. Dip each slice of bread into the custard mixture, letting it absorb well.
  3. Heat butter in a pan over medium heat. Cook the soaked bread slices for 2-3 minutes per side until golden brown.
  4. To make chantilly cream, whisk together the cream, icing sugar, and vanilla together until soft peaks form.
  5. Plate the French toast, top with fresh blueberries, toasted coconut flakes, and a generous dollop of Chantilly cream.
