Pumpkin, Ham & Rocket Pizzas

Ingredients

  • 600g Kent pumpkin (thinly sliced)
  • 1/4 cup extra virgin olive oil
  • 1 lemon (juiced)
  • 60g baby rocket leaves
  • 150g chunky basil
  • 2 pizza bases

Method

  1. Place 2 baking trays in the oven. Preheat oven to 230°C/210°C fan-forced.
  2. Grease and heat a chargrill pan over high heat. Cook pumpkin for 2 minutes on each side or until tender.
  3. eanwhile, place dip and half the rocket in a food processor. Process until rocket is finely chopped. Add oil and lemon juice, then process until just combined. Season.
  4. Place pizza bases on baking paper. Spread bases evenly with two-thirds of the pesto. Scatter over half the cheese, then arrange ham and pumpkin over bases. Scatter over remaining cheese, then bake for 15 minutes or until bases are golden and crisp.
  5. Serve pizzas drizzled with remaining pesto and scattered with remaining rocket.
