Tropical Parfait with Macadamia & Vanilla Nut Crunch

This recipe works well with a variety of fresh fruits, including pineapple, paw paw, mango, banana or
watermelon.
Ingredients
- 2 cups Pure Delish Macadamia & Vanilla Nut Crunch
- 3 cups coconut yoghurt
- 3/4 cup passionfruit curd
- 1 pineapple, flesh chopped
- 1 paw paw or mango, flesh chopped
- 1 tablespoon fresh lime juice
Method
- In a bowl, combine the fresh chopped fruit. Toss through lime juice then set aside.
- Take 1 cup of Pure Delish Macadamia & Vanilla Nut Crunch and divide it between 6 glasses. Top with a generous spoonful of coconut yoghurt, passionfruit curd and the fresh fruit. Repeat the above steps and finish with a little extra Nut Crunch.
