Spanish Salad
Fresh and vibrant Spanish style salad!

Shake up your summer barbecue with this quick and easy Spanish salad recipe.


  • 3 large garlic cloves, crushed
  • Pinch of sugar & chilli powder
  • 1/2 cup each: red wine vinegar, olive oil
  • 1 bag mesclun mix
  • 424g can tuna, drained and flaked
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup diced cucumber
  • 1/2 cup Kalamata olives
  • I/2 cup red onion, sliced finely
  • 1/4 cup each of chopped parsley & mint
  • 3 hard-boiled eggs, peeled & halved
  • salt & pepper to taste

  1. Whisk the garlic, sugar, chilli powder and vinegar to combine.
  2. Gradually whisk in the oil.
  1. Combine the salad ingredients in a large bowl.
  2. Just before serving, drizzle with a little of the dressing and lightly toss.
