Thai Chicken Cakes v2

Authentic Thai spices bring these chicken cakes to life.


  • 2 chicken breasts, chopped finely
  • 1 red onion, peeled and finely diced
  • 1 cloves garlic, peeled and diced
  • 1 tsp ginger, diced
  • 1 small red chilli, finely diced
  • 1 tsp coriander, chopped
  • 1 tbs fish sauce
  • 1 medium egg, egg whites
  • 30g panko bread crumbs

  1. Pre-heat the oven to 180°C. Ensure all ingredients are chopped finely including the chicken.
  2. Combine all ingredients in a bowl and ensure everything is mixed evenly. Now separate the mixture and pack tightly into 4 patties.
  3. Pan fry each of the patties on a medium heat for 3 minutes on each side. Remove from the pan and transfer to a baking tray. Bake for 10 minutes. Remove from the oven and serve with a choice of condiments.
