Brussel Sprouts & Orange Gratin

A seasonal winter vegetable and well worth waiting for. They contain good amounts of vitamin A, vitamin C, folic acid and dietary fibre.

Ingredients

500g brussel sprouts, washed and trimmed
1 tbspn butter or olive oil
Juice of 1-2 oranges or approx 1/2 cup orange juice
Generous handful grated cheese – edam or mozzarella
Salt and pepper to taste

Preheat the oven grill. Cut the brussel sprouts in half. Melt the butter in a frying pan over a moderate heat and add the brussel sprouts cut side down. Season with salt and pepper. Cook for a few minutes until just golden then pour over the orange juice. The juice should come about 1/2 cm up the sides of the pan. Cover and leave to cook and thicken a bit. Once the brussel sprouts are al dente (firm but tender) sprinkle over the grated cheese and grill until melted and golden. Serve as a side to meat and mashed potatoes.
