Bacon and Tomato Bowties

Pasta, yummy!! Great for those unexpected guests arriving on your doorstep - quick and easy.

Ingredients

6-8 rashers shoulder bacon, finely chopped
1 large onion, chopped
350g bowtie pasta
4 large tomatoes, diced
1/3 cup each: finely chopped parsley, coriander
1/4 cup freshly grated Parmesan cheese

Cooking Instructions

Cook the chopped bacon in a large non-stick frying pan over medium heat, until crisp. Transfer with a slotted spoon to a paper towel. Meanwhile, cook the pasta in a large saucepan of boiling water until it is just tender. Add the onion to the fat in the pan. Sauté, until soft and golden. Stir in the tomato. Cook for 2-3 minutes. Add the herbs and bacon. Drain the pasta well and place in a large serving bowl. Add the bacon mixture and cheese. Toss well. Serve immediately. Serves 4.
