Mushroom Stroganoff

Great meal to have with family and friends..


300g dried fettuccine or similar
1 large rasher bacon, chopped
1 Tbsp canola oil
1 onion, diced
500g mushrooms, thinly sliced
390g can cannellini beans, drained
150g light sour cream
1/4 cup finely chopped parsley

Hints & Tips

Cooking Instructions

Cook the pasta according to the packet instructions. Meanwhile, pan-fry the bacon in the oil, until coloured. Add the onion and saute, until softened. Add the mushrooms and cook until lightly browned and any liquid has evaporated. Stir in the beans, sour cream and parsley. Heat through. Serve over the drained pasta. Great served with a green salad or steamed vegetables.
