Tomato Roasted Chicken
Try all the different flavours of canned tomatoes - you will be surprised how each one gives it's own burst of flavour to the chicken
Ingredients
1 No 14 or 16 fresh chicken
1 1/2 cups stuffing (optional)
400g can diced flavoured tomatoes (eg Italian,
Mexican, Savoury etc)
freshly ground black pepper to taste

Cooking Instructions
Preheat the oven to 180°C. Fill the chicken cavity with your favourite stuffing, if using. Truss or tie the bird to retain a good shape. Place in a medium roasting pan. Pour the can of tomatoes over the top of the chicken, allowing it to run down the sides.
Roast for 55 minutes per kilogram plus 20 minutes. The tomato forms a great gravy to serve with the chicken.
